We give gratitude.<\/p>\n<p>So &#8230; do what i did and take\u00a0some long slow breaths\u00a0and just STOP for a moment &#8230; STOP and close your eyes for a few seconds (no, no not yet, read\u00a0to the end of this caption first !!)\u00a0and think of\u00a0all the things\u00a0you are\u00a0grateful for. It could be something\u00a0glaringly obvious\u00a0or something as\u00a0simple as the sun shining out there\u00a0today. We usually like to keep things local on belly but this attitude should be spread around the world and back. Start by thinking good and healthy thoughts and this will transpire into good and healthy\u00a0eating &#8230; could it be that easy ?? Well that&#8217;s up to you to make your own mind up about. This is a cafe that encourages you to think, speak and eat positivity by naming their dishes with self affirming names. For example, if you wish to order the &#8216;I am adored&#8217; dish then you have to say the words, &#8216;I am adored&#8217; and when your dish is served, the waiter will\u00a0present it to you by saying &#8216;You are adored&#8217;. This is how it all begins &#8230;<\/p>\n<p>It&#8217;s an interesting concept and one that really captured me which is why i chose to share some readings from the book with you on belly.\u00a0The book is\u00a0called\u00a0&#8220;<strong>I Am Grateful<\/strong>&#8221;\u00a0\u00a0and is written by the co-owner and chef of Cafe Gratitude Terces Englehart. It&#8217;s the &#8216;<em>Recipes and Lifestyle of Cafe Gratitude&#8217; <\/em>and it\u00a0seems\u00a0to be\u00a0distributed by North Atlantic Books, Berkeley, California if you&#8217;d like\u00a0to get your hands on it and thumb through it&#8217;s pages of deliciousness. It&#8217;s full of the cafes recipes which are interspersed amongst captions like &#8230; <em>&#8216;Do you invest more attention in being grateful or chasing desires?&#8217;\u00a0<\/em>or<em> &#8216;Unhappiness is the hunger to get, Happiness is the hunger to give&#8217; <\/em>so you see. it&#8217;s more than just your average cookbook in fact there is no cooking involved &#8211; It&#8217;s RAW and VEGAN !!!<\/p>\n<p><a href=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude-rainbowspiral1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-1502\" title=\"gratitude-rainbowspiral1\" src=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude-rainbowspiral1-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude-rainbowspiral1-300x300.jpg 300w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude-rainbowspiral1-150x150.jpg 150w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude-rainbowspiral1-400x400.jpg 400w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude-rainbowspiral1.jpg 480w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>We all have our own story and journey that has\u00a0brought us to where it is we are today and Terces&#8217; story is\u00a0no exception. From her book i shared some of her story.<\/p>\n<p>&#8220;<strong><em>This book is dedicated to\u00a0my Mother and her love of food , with which she gifted me<\/em><\/strong>&#8221; Terces Engelhart. A\u00a0wonderful gift indeed\u00a0passed\u00a0down to Terces\u00a0in the kitchens\u00a0of home.\u00a0It was here that she was taught\u00a0to follow explicit measurements and it was also here that she re-learned to\u00a0cook with\u00a0intuition.\u00a0Her huband and co-owner of the cafe calls her a &#8220;Food Alchemist&#8221; which has been more than proven\u00a0by their thriving providing\u00a0!! A\u00a0 natural kitchen farmer in the making it seems but not\u00a0until she had\u00a0made\u00a0it back through to the otherside,\u00a0from a\u00a0life\u00a0accompanied\u00a0by eating disorders.<\/p>\n<p>Things\u00a0started to change back at the age of sixteen\u00a0when her swim coach\u00a0pressured her\u00a0to loose weight for the National Championships and\u00a0the possibility of going to the 1968 Olympics. That dream was never realised and instead a nightmare began\u00a0with what was the\u00a0start of a slow self starvation\u00a0at this tender age, living\u00a0on\u00a0only lettuce and tab cola\u00a0as the fear of regaining weight became too great.\u00a0At\u00a0just over 36 kg Terces found herself\u00a0in a military hospital in the midst of the Vietnam war where she was molested by her physician and told to keep quiet, learned to lie and\u00a0fill her pockets with rocks at weigh-in\u00a0to be\u00a0released into the fearful hands of her mother, who wanted only to feed her daughter and return her to &#8216;normal&#8217;. With the help of a tutor she went on to finish high-school and continued on into her 20 year battle with\u00a0anorexia and bulimia. The\u00a0secretive lives of these dis-ease sufferers was\u00a0not understood\u00a0back then.\u00a0Today there is more awareness and help on offer but Terces\u00a0believed she was caught in some unknown swirl of punishment and survival.<\/p>\n<p><a href=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/imagesCAEOTQKU.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1522 alignright\" title=\"imagesCAEOTQKU\" src=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/imagesCAEOTQKU.jpg\" alt=\"\" width=\"253\" height=\"199\" srcset=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/imagesCAEOTQKU.jpg 253w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/imagesCAEOTQKU-150x117.jpg 150w\" sizes=\"auto, (max-width: 253px) 100vw, 253px\" \/><\/a><\/p>\n<p>Still managing to major in Home Economics,\u00a0she got her first job as a dietitian&#8217;s assistant in a hospital and\u00a0while at the time\u00a0married to her childhood sweetheart,\u00a0she was once again sexually molested by one of their friends. Divorced at\u00a0twenty she went on to join the airlines, become a dental assistant, work in and around restaurants, marry a Vietnam vet who was an addict, give birth to her first\u00a0son, move to a farm in Pennsylvania,\u00a0get hit by her addicted husband, go to work in the local pub, give birth to her daughter, start a wholesale bakery, get divorced, open up the first\u00a0Mexican restaurant in Pennsylvania, marry the bartender who hired her in the pub, become a Navy wife, have another son, be transferred back to the Naval base in California\u00a0where all of this started.\u00a0Whoah !!!\u00a0\u00a0\u00a0<\/p>\n<div id=\"attachment_1518\" style=\"width: 310px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude9.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1518\" class=\"size-medium wp-image-1518 \" title=\"gratitude9\" src=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude9-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude9-300x225.jpg 300w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude9-150x112.jpg 150w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2011\/06\/gratitude9.jpg 400w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1518\" class=\"wp-caption-text\">byronstyle<\/p><\/div>\n<p>One day after coming out of the bathroom\u00a0having vomited, her 8 year old daughter asked her &#8220;Mummy are you ok?&#8221; to which she\u00a0brushed off with a casual &#8220;Yes,&#8221; before realising\u00a0and deciding that she did not want to pass the lies, destruction and unhealthiness of her ways onto her own children.<\/p>\n<p>Amongst\u00a0the many healing modalities that were available and used it could be said that the &#8216;kitchen farming&#8217;, preparing, eating, sharing and being grateful for nutritious food was\u00a0an\u00a0outstanding\u00a0element\u00a0in Terces healing.\u00a0To truly fuel and nourish\u00a0a depleted body, to\u00a0bring\u00a0yourself back to life with raw, living foods, to love yourself\u00a0from the INSIDE, to feel yourself revive\u00a0means that\u00a0people\u00a0with eating disorders can be encouraged to go on to\u00a0live a life that is literally full of life !!!\u00a0Raw foods and juices\u00a0were a predominant part of the\u00a0turnaround for Terces and letting go of old patterns and habits which is harder than some of us could ever imagine &#8230; but it is possible. Clean and clear foods create a clean and clear mind. It&#8217;s a beautiful thing to discover your true self. Terces is now\u00a0into her 20th year\u00a0of loving and living life without any eating\u00a0disorders and is\u00a0therefore a\u00a0live, breathing, vibrant voice\u00a0of encouragement and inspiration. If you can change the way you think about food, it could well change the way you eat it. Putting positive, living\u00a0thoughts and foods into your mind and body can only have positive effects &#8230; no ?? I think it&#8217;s time to start practising some of this around the Shire. There are some great\u00a0clinics around the Shire where the two support each other. It&#8217;s my belief\u00a0that the natural approach as well as the conventional approach is\u00a0healthy, that way\u00a0you have a broader understanding of information and it can be left in your control as to what you decide is best for YOU. I urge you to watch it and decide for yourself how much Food Matters in your own life. Think about how much you spend to put premium petrol in your car or buy new clothes to keep you warm in winter, holidays to make you feel better because you\u00a0are often unwell, makeup and perfumes and hair products and lotions for the outside\u00a0and then tell me you can&#8217;t &#8216;afford&#8217; to eat organic.
