{"id":2250,"date":"2012-04-16T08:22:25","date_gmt":"2012-04-15T22:22:25","guid":{"rendered":"http:\/\/www.belly.net.au\/?p=2250"},"modified":"2012-04-16T08:28:32","modified_gmt":"2012-04-15T22:28:32","slug":"from-federal-to-cape-town","status":"publish","type":"post","link":"http:\/\/www.belly.net.au\/?p=2250","title":{"rendered":"From Federal to Cape Town"},"content":{"rendered":"<p><strong>On air on Byron Bay&#8217;s bayfm 99.9 community radio on 16 April 2012<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>Today two wonderful cooks are coming on belly, Belinda Jeffery and Cecile Yazbek.\u00a0 Belinda and Sue Kelly will talk about the campaign to save the Federal Hall, a lovely village in the Byron hinterland.\u00a0 Belinda has kindly offered to help in the campaign to raise money  for the Federal Community to buy the old Anglican Church and land see <a title=\"www.federalhall.org.au\" href=\"http:\/\/www.federalhall.org.au\" target=\"_blank\">www.federalhall.org.au<\/a>.\u00a0 She will be teaching pastry making, a subject close to the bellysisters&#8217; heart, especially at the moment, on May 2.\u00a0 Here&#8217;s the basic info:<\/p>\n<p>Morning Tea &amp; Cooking Demonstration with Cookbook Author &amp; Delicious Magazine writer Belinda Jeffery.<\/p>\n<p>Belinda shows you how to make perfect pastry every time, and turn it into fabulous tarts<\/p>\n<p>Wednesday 2nd May 9.30am<\/p>\n<p>@ Federal Hall, Federal<\/p>\n<p>$20 includes tea or coffee and selection of yummy homemade cakes<\/p>\n<p>Come along on the day, you can also reserve your spot<\/p>\n<p>or book a table with friends call &#8211; Sue 66884465<\/p>\n<p>email suekelly50@gmail.com<\/p>\n<p>For more information go to<a title=\"www.federalhall.org.au\" href=\"http:\/\/www.federalhall.org.au\" target=\"_blank\"> www.federalhall.org.au<\/a><\/p>\n<p>&nbsp;<\/p>\n<p>My next guest today\u00a0 is Cecile Yazbek, who grew up in South Africa in a Lebanese household, in the days of apartheid.\u00a0 She has just published her latest book, &#8220;From mezze to milk tart&#8221;.\u00a0 It has hundreds of wonderful vegetarian recipes, many very simple, but inspiring enough to turn anyone vegetarian, at least until every recipe in the book has been made and tried.\u00a0 Many are Lebanese, others from the varied cuisines that inspired Cecile to start cooking from a very early age in South Africa.<\/p>\n<p>Here is a couple of seasonal suggestions from the book, inspired by Cecile&#8217;s love of local markets.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2012\/04\/cecille007.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2251\" title=\"cecille007\" src=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2012\/04\/cecille007.jpg\" alt=\"\" width=\"480\" height=\"320\" srcset=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2012\/04\/cecille007.jpg 480w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2012\/04\/cecille007-300x200.jpg 300w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2012\/04\/cecille007-150x100.jpg 150w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2012\/04\/cecille007-400x266.jpg 400w\" sizes=\"auto, (max-width: 480px) 100vw, 480px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #ff0000;\"><strong>BANANA SAMBAL<\/strong><\/span><\/p>\n<p>&nbsp;<\/p>\n<p>The Indian lady at the banana farm on the highway near Bangalow<\/p>\n<p>sometimes presents me with a whole box of ripe bananas, \u2018for cakey\u2019.<\/p>\n<p>One day I gave her one of my banana cakes, but she wrinkled her nose<\/p>\n<p>and said, \u2018Is good for you; Indian people no like.\u2019 Anytime one shops<\/p>\n<p>there, she always piles extras into one\u2019s bag!<\/p>\n<p>4 ripe bananas, sliced<\/p>\n<p>2 tablespoons mayonnaise<\/p>\n<p>1 tablespoon fruit chutney<\/p>\n<p>1 level teaspoon curry powder<\/p>\n<p>&nbsp;<\/p>\n<p>Mix together well and serve immediately.<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #ff0000;\"><strong>POTATO AND MACADAMIA CURRY PIES<\/strong><\/span><\/p>\n<p>&nbsp;<\/p>\n<p>Sweet potatoes, cooked and roughly mashed, may be used instead.<\/p>\n<p>&nbsp;<\/p>\n<p>2 sheets ready-rolled puff pastry<\/p>\n<p>4 large potatoes, boiled, cooled, peeled<\/p>\n<p>and coarsely grated<\/p>\n<p>1 cup macadamia pieces<\/p>\n<p>1 large onion, peeled and finely chopped<\/p>\n<p>1 tablespoon oil<\/p>\n<p>1 teaspoon cumin seeds<\/p>\n<p>2 teaspoons fragrant curry powder<\/p>\n<p>1 vegetable stock cube, dissolved in<\/p>\n<p>100 mL hot water<\/p>\n<p>pinch of salt<\/p>\n<p>pinch of pepper<\/p>\n<p>&nbsp;<\/p>\n<p>Heat oil and fry onion until shiny. Add seeds and curry powder and<\/p>\n<p>stir about. Add the stock, mix well and add potato and nuts. Fork<\/p>\n<p>through until all coloured. Set aside to cool. Fill<\/p>\n<p>puff pastry \u2013 either as one large pie with top and bottom crust or 8<\/p>\n<p>small pastie shapes, and bake at 220 \u00b0C until browned.
