{"id":658,"date":"2010-07-19T17:04:55","date_gmt":"2010-07-19T07:04:55","guid":{"rendered":"http:\/\/www.belly.net.au\/?p=658"},"modified":"2010-07-30T15:52:38","modified_gmt":"2010-07-30T05:52:38","slug":"july-19-radio-show-tasting-the-byron-bay-writers-festival","status":"publish","type":"post","link":"http:\/\/www.belly.net.au\/?p=658","title":{"rendered":"July 19 radio show: tasting the Byron Bay Writers Festival"},"content":{"rendered":"<div id=\"_mcePaste\">Today Srs T and B were having such a good time talking with the Director of the Byron Bay Writers Festival and the Northern Rivers Writer Centre, Jeni Caffin, that we ended up spending most of the show with her. \u00a0It turns out that the whole staff of the NRWC (about 4 people who work enough for 20) are completely food obsessed &#8211; that explains all the great food events at the festival. \u00a0And the way they make sure the many volunteers get tasty and healthy food on their shifts. \u00a0And Jeni&#8217;s 19 year old cat wears a small tea cosy as a hat right through winter &#8211; who knew?<\/div>\n<div id=\"_mcePaste\">The 2010 Festival will include breakfasts lunches and dinners with writers, a cooking workshop with the Red Lantern&#8217;s Luke Nguyen, a book launch by popular local food writer Victoria Cosford, and plenty of sessions that touch on food, especially &#8220;Eat me: writing food, glorious food&#8221; on the Saturday. \u00a0Jeni&#8217;s advice is \u00a0to look out for these authors : Monica Trapaga, Ramona Koval, Luke Nguyen, Victoria Cosford, Juanita Phillips, Joanna Savill and Simon Marnie.<\/div>\n<div id=\"_mcePaste\">Go to the Festival site for author biographies and details of all the events.<\/div>\n<div id=\"_mcePaste\">And of course here&#8217;s the eggplant tart &#8211; a tartless tart, well tested by everyone at the writers centre, guaranteed to work and be delicious.<\/div>\n<div>\n<div id=\"attachment_672\" style=\"width: 284px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2010\/07\/Perfect-Tiger-in-hat.crop_.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-672\" class=\"size-medium wp-image-672\" title=\"Perfect Tiger in hat.crop\" src=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2010\/07\/Perfect-Tiger-in-hat.crop_-274x300.jpg\" alt=\"\" width=\"274\" height=\"300\" srcset=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2010\/07\/Perfect-Tiger-in-hat.crop_-274x300.jpg 274w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2010\/07\/Perfect-Tiger-in-hat.crop_-936x1024.jpg 936w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2010\/07\/Perfect-Tiger-in-hat.crop_-137x150.jpg 137w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2010\/07\/Perfect-Tiger-in-hat.crop_-400x437.jpg 400w, http:\/\/www.belly.net.au\/wp-content\/uploads\/2010\/07\/Perfect-Tiger-in-hat.crop_.jpg 1067w\" sizes=\"auto, (max-width: 274px) 100vw, 274px\" \/><\/a><p id=\"caption-attachment-672\" class=\"wp-caption-text\">Jeni&#39;s glamorous cat, Perfect Tiger, recommends wearing a stylish tea cosy in winter<\/p><\/div>\n<\/div>\n<div id=\"_mcePaste\"><span style=\"text-decoration: underline;\"><strong><span style=\"color: #ff0000;\">EGGPLANT TART<\/span><\/strong><\/span><\/div>\n<div><span style=\"text-decoration: underline;\"><strong><span style=\"color: #ff0000;\"><br \/>\n<\/span><\/strong><\/span><\/div>\n<div><span style=\"text-decoration: underline;\"><strong><span style=\"color: #ff0000;\"><br \/>\n<\/span><\/strong><\/span><\/div>\n<div id=\"_mcePaste\">For a round tart made in a dish about 8 inches across and about 2 inches<\/div>\n<div id=\"_mcePaste\">deep you will need approximately:<\/div>\n<div id=\"_mcePaste\">3 medium eggplant;<\/div>\n<div id=\"_mcePaste\">2-3 large brown onions;<\/div>\n<div id=\"_mcePaste\">a little balsamic vinegar and sugar to taste to caramelise the onions<\/div>\n<div id=\"_mcePaste\">a large cup of grated parmesan;<\/div>\n<div id=\"_mcePaste\">herbs to taste, whatever you like, I use basil and parsley<\/div>\n<div id=\"_mcePaste\">olive oil with crushed garlic in it, to taste<\/div>\n<div id=\"_mcePaste\">Cut the stem end off and slice the eggplant in 5mm widths lengthways,<\/div>\n<div id=\"_mcePaste\">discarding the first skin slice on each side. Brush both sides with garlic oil<\/div>\n<div id=\"_mcePaste\">Put baking paper or alfoil down and grill each side till lightly golden and<\/div>\n<div id=\"_mcePaste\">transparent<\/div>\n<div id=\"_mcePaste\">Cook the onions, balsamic and sugar slowly till caramelised. Lightly grease your tin<\/div>\n<div id=\"_mcePaste\">Lay the eggplant slices, overlapping to fill gaps,<\/div>\n<div id=\"_mcePaste\">Put caramelised onion, cheese and herbs mixed in between each layer of eggplant<\/div>\n<div id=\"_mcePaste\">Press down firmly each layer of eggplant.
