{"id":706,"date":"2010-08-16T17:09:16","date_gmt":"2010-08-16T07:09:16","guid":{"rendered":"http:\/\/www.belly.net.au\/?p=706"},"modified":"2010-08-17T00:18:49","modified_gmt":"2010-08-16T14:18:49","slug":"16-august-2010-e-bookslove-and-polenta","status":"publish","type":"post","link":"http:\/\/www.belly.net.au\/?p=706","title":{"rendered":"16 August 2010 &#8211; e-books,love and polenta"},"content":{"rendered":"<p>A pretty crazy show on day one of our major subscriber drive aka radiothon.\u00a0 Sister T was answering phones for the previous show, Andrew Davie&#8217;s luscious Lighthouse Lounge, chatting up subscribers, and she ain&#8217;t a morning girl (why do you think we&#8217;re sponsored by a coffee company?)\u00a0 Sister B had been to the gim for the first time in a loooong time and looked like she had been run over by a cement mixer.\u00a0 And our lovely guest, presenter Karin Kolbe from Bayfm&#8217;s<a title=\"'the spin cycle'\" href=\"http:\/\/www.bayfm.org\/friday\/90-fri-09am-the-spin-cycle.html\" target=\"_blank\"> &#8216;the spin cycle&#8217;<\/a>, is learning to surf.<a href=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2010\/08\/kk1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-710\" title=\"kk1\" src=\"http:\/\/www.belly.net.au\/wp-content\/uploads\/2010\/08\/kk1.jpg\" alt=\"\" width=\"78\" height=\"78\" \/><\/a><\/p>\n<p>She had all the glory ot standing up and all the pain of a solid fall in a few short seconds, and turned up full of painkillers.\u00a0 But also full of beans, great info on her and TOOT&#8217;s (Train on our Tracks) campaign to bring back train transport, which would also make our food more sustainable.\u00a0 And on where e-publishing,\u00a0 is going, as she is a publisher and &#8216;internetty person&#8217;.\u00a0 We look forwards ot electronic cookbooks with a stack of extra features as soon as publishers and authors get more creative.\u00a0 And she shared her favourite, tried and tested cake recipe, from a tattered exercise book &#8211; with alphabetical tabs though, obviously an organised woman.<\/p>\n<p><!-- \t\t@page { margin: 2cm } \t\tP { margin-bottom: 0.21cm } \t\tA:link { so-language: zxx } --><span style=\"color: #ff0000;\"><strong>POLENTA AND YOGHURT CAKE<\/strong><\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">Ingredients :<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">300 g. plain yoghurt<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">100 g. polenta<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">grated rind of 1 orange<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">125 g. softened,chopped unsalted butter<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">220 g. caster sugar<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">3 eggs<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">200 g. self raising flour<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">\u00bd tsp bicarbonate of soda<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">85 g.  chopped raisins<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">80 g pine nuts [or try macadamias in our area \u2013 n.d.sr.T]<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">citrus syrup :<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">1 lemon and 1 orange (preferably organic)<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">200 g. caster sugar<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">30 mL Cointreau (more is more, says Karin)<br \/>\n<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">and cream to serve!<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">KK says that this cake is magic because first off you put the yoghurt and polenta and grated rind together to chat for an hour in a bowl.<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">Heat oven to 180C.<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">Toast nuts well in a little olive oil in a pan on low heat, it makes them come alive, but careful not to let them burn.<br \/>\n<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">Cream butter and sugar until light and fluffy, then add the eggs one at a time, beating well.  Sift together the flour and bicarbonate and fold gently into the butter mixture.  Toss the raisins in a tbs of flour.  Add yoghurt\/polenta mix to batter, fold in nuts and raisins. <\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">Butter and flour a 2 litre\/21 cm kugelhopf (holey) cake mould.  Pour in cake batter and cook 30-45 minutes, until a skewer comes out clean.<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">While the cake cooks, make the citrus syrup.<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">Make small threads of zest from the orange and lemon and juice them.  Put all ingredients except Cointreau in a saucepan, bring to the boil, lower heat and reduce volume by half.  Turn off heat and add Cointreau.<\/span><\/p>\n<p><span style=\"font-family: Tahoma,sans-serif;\">To assemble, turn cake onto a rack for 10 minutes, then slide onto a plate and and pour hot syrup on top.
