{"id":206,"date":"2010-02-27T14:38:14","date_gmt":"2010-02-27T03:38:14","guid":{"rendered":"http:\/\/www.belly.net.au\/?page_id=206"},"modified":"2024-07-22T14:17:33","modified_gmt":"2024-07-22T04:17:33","slug":"asian-frittata-for-gayle","status":"publish","type":"page","link":"https:\/\/www.belly.net.au\/?page_id=206","title":{"rendered":"Asian frittata &#8211; for Gayle"},"content":{"rendered":"<p>This is a <em>belly lab<\/em> recipe by Sister Tess, inspired by\u00a0 guest Gayle Russell, who has been\u00a0 keeping chooks for 21 years in various backyards, and now teaches adult classes in sustainable home food production.\u00a0 Gayle recommends matching Vietnamese mint and eggs &#8211;\u00a0 and yes, it&#8217;s a heavenly combination! thanks Gayle.<\/p>\n<p>One of Sister T&#8217;s fave frittatas involves leftover pasta, and it turns out this idea works just as well with rice.\u00a0 If you want to go glam, you could substitute cooked, (peeled!) prawns for the rice.\u00a0 Very young garlic is another heavenly delicate thing, if you can&#8217;t get it substitute spring onions, green and white part, not normal garlic.<\/p>\n<p><strong><br \/>\nASIAN FRITTATA <\/strong><\/p>\n<p>young garlic\/garlic shoots in 4 cm pieces quickly fried with 1 tsp chopped ginger in mild flavoured oil<br \/>\n1\/2 &#8211; 3\/4 cup leftover jasmine rice (ie cooked)<br \/>\n1\/4 to 1\/3 cup roughly chopped Vietnamese mint<br \/>\nsalt. pepper, maybe chilli<br \/>\n6 eggs<\/p>\n<p>Break eggs into a bowl and season, add other ingredients, mix gently.\u00a0 This works best if they are all more or less at room temperature.<br \/>\nBarely coat frypan in mild oil, heat to almost smoking on high heat<br \/>\nAdd egg mix, lower heat, cook frittata on one side until almost cooked through, moving the pan so it doesn&#8217;t stick, and bringing in the sides with a wooden spoon or spatula to tidy them up.<br \/>\nTake a plate that fits well over your frypan and quickly invert the pan.\u00a0 If you do this too soon you will get hot egg all over yourself or your kitchen, but it&#8217;s easy with a little practice.\u00a0 Try with a small frittata first if you are unsure.<br \/>\nAdd a tiny bit more oil to the pan and slide second side of frittata into pan to finish cooking, on low heat.<\/p>\n<p>Enjoy hot or cold while watching your chickens .<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a belly lab recipe by Sister Tess, inspired by\u00a0 guest Gayle Russell, who has been\u00a0 keeping chooks for 21 years in various backyards, and now teaches adult classes in sustainable home food production.\u00a0 Gayle recommends matching Vietnamese mint and eggs &#8211;\u00a0 and yes, it&#8217;s a heavenly combination! thanks Gayle.
