You can still get a taste of the generator on http:\/\/www.thegenerator.com.au\/\u00a0 , including plenty of stories on food activism.\u00a0 Giovanni came on\u00a0 belly to talk about the food of his ancestral island of Sardinia in Italy.<br \/>\n<strong><br \/>\nSPINACH PANCAKES WITH RED SAUCE<\/strong><\/p>\n<p>1-2kg very ripe tomatoes<br \/>\n5-8 garlic cloves<br \/>\nolive oil<br \/>\nsalt<br \/>\n1.5 cups of self raising flour<br \/>\n1 egg<br \/>\n250ml milk<br \/>\nbunch of silver beet or 3 bunches of spinach (or kale or other greens)<br \/>\nmustard (seeded or English hot)<br \/>\n300-500g ricotta cheese<\/p>\n<p>Bring a large pot of water to the boil<br \/>\nPlace tomatoes into boiling water and boil until skins split (6-12 minutes)<\/p>\n<p>While tomatoes are boiling<br \/>\nRemove stems from greens, rough chop and place in colander<br \/>\nPlace flour into bowl and add pinch of salt and 2tsp of mustard<br \/>\nBreak egg into well in centre of flour<br \/>\nGradually beat egg into flour adding milk to maintain fluid consistency as flour is drawn into liquid<br \/>\nSet aside so that flour absorbs milk<\/p>\n<p>When tomato skins split or wrinkle<br \/>\nPour boiling water from tomatoes over greens<br \/>\nPlace tomatoes aside to cool<br \/>\nFinely chop greens and squeeze to remove moisture<br \/>\nReplace in colander and press under bowl to remove further moisture<\/p>\n<p>When tomatoes are cool and pancake mix is made<br \/>\nPeel tomatoes and remove stem<br \/>\nFinely chop garlic and place with tomatoes<br \/>\nAdd 100ml of olive oil and 1tsp salt per kg tomato<br \/>\nGently simmer tomatoes for until reduced to paste, mashing every 5 to 10 minutes (30 minutes &#8211; 2hours)<br \/>\nAdjust salt to taste<\/p>\n<p>Half an hour before serving<br \/>\nPut oven on lowest setting to keep pancakes warm<br \/>\nPlace dinner plates in oven<br \/>\nAdd pressed greens to pancake mix and stir in<br \/>\nAdd milk or flour to bring mix to a smooth consistency that runs off the spoon<br \/>\nFry pancakes in round pan with smear of olive oil to prevent sticking until bubbles burst<br \/>\nToss and brown on other side<br \/>\nPlace pancakes in oven to remain warm as they are cooked.<\/p>\n<p>To serve<br \/>\nRemove warm plates and pancakes from oven<br \/>\nPlace one pancake on each plate<br \/>\nSpread ricotta cheese on pancake<br \/>\nRoll pancakes into tube<br \/>\nDribble red sauce over pancake<\/p>\n<p>Enjoy<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a delicious guest recipe by Giovanni Ebono, who presented the very popular &#8216;the generator&#8217; show on bayfm, on energy and environmental issues, and was a Greens candidate.
