{"id":2158,"date":"2012-02-13T07:55:17","date_gmt":"2012-02-12T21:55:17","guid":{"rendered":"http:\/\/www.belly.net.au\/?p=2158"},"modified":"2012-03-05T08:11:11","modified_gmt":"2012-03-04T22:11:11","slug":"breadmilkbuttergnomes-and-ukeleles","status":"publish","type":"post","link":"https:\/\/www.belly.net.au\/?p=2158","title":{"rendered":"bread,milk,butter,gnomes and ukeleles"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>On\u00a0 belly today\u00a0 Sister T chatted with Don Maughan, who grew up in Byron Bay in the 50s as the son of one of the two bakers.\u00a0\u00a0 A radical baker who liked yoga and made brown bread as well as white.\u00a0 Then one day he needed money for something and his mum sent him off to Norco to get a job.\u00a0 Forty years later, he finally left, after a range of interesting jobs since his early apprentice days.\u00a0 He now has more time to carve interesting walking sticks and character filled gnomes.\u00a0 And learn the ukelele, although we were so busy talking that I forgot to beg for a tune.\u00a0 He&#8217;s promised to come back, after a little more practice, to talk cheese and play ukelele &#8211; a great combination! Arts and industry estate, Byron.\u00a0 ( 3 blocks back behind Maddog surf shop)<\/p>\n<p>When &#8211; Every Thursday, 9am to 12pm and\u00a0 5pm to 6pm&#8230;<\/p>\n<p>Need &#8211;\u00a0 your pension, concession, or health care card with you to register.<\/p>\n<p>&nbsp;<\/p>\n<p>MAN COMFORT FOOD FORMULA &#8211; by Donald Maughan<\/p>\n<p>&nbsp;<\/p>\n<p>6 Pork Spare Ribs<\/p>\n<p>6 chicken legs<\/p>\n<p>Big cup of red wine (1 for the pot and one for you to drink as you work)<\/p>\n<p>Olives &#8211; pitted<\/p>\n<p>sun-dried tomatoes<\/p>\n<p>6 big Mushrooms<\/p>\n<p>1 celery stick<\/p>\n<p>1 chilli (seeds out)<\/p>\n<p>1 Tin tomato<\/p>\n<p>375 g3 Potatoes cut into 1\/6 chunks<\/p>\n<p>.2 Carrots cut into 1\/6  chunks<\/p>\n<p>2 Bay leaves<\/p>\n<p>Cardamon Seeds( fresh ground)Some spice like Chinese five spice or Moroccan Spice<\/p>\n<p>ground pepper<\/p>\n<p>Pre heat oven to 180oC.<\/p>\n<p>Sear  the pork on a very hot plate.  Add everything (with the exception of the Potato and Carrots) into an oven proof container with a lid.   Put in the oven cook,  for1.5 hrs then add carrots and potato for the last 1 hour.  Total cook time 2.5 hrs approximately.<\/p>\n<p>Meat will be very tender.<\/p>\n<p>Serve in a bowl with crusty bread and red wine.  If you let the pot stand for approx. 30 minutes you can scrape excess fat of the top but I like the fat.
