As soon as the morning milking is completed Debra and Sue<br \/>\npasteurise the milk and spend the day making creamy yoghurts, cottage cheese,<br \/>\nquark, various fetas, haloumi, labna, brie and camembert. They also make kefir<br \/>\na live yeast, live bacteria health drink.<br \/>\n<span style=\"color: #ffff00;\"><strong><br \/>\nPRESENTER<\/strong><\/span> : sister Rasela<\/p>\n<p><span style=\"color: #0000ff;\"><strong>RECIPES<\/strong><\/span> :<\/p>\n<p><span style=\"color: #ff0000;\"><strong>COOL KEFIR DRESSING<\/strong><\/span> &#8211; from sister Rasela<\/p>\n<p>2 cups fresh Kefir<br \/>\n1 heaped Tbsp fresh parsley, chopped<br \/>\n1 heaped Tbsp fresh chives<br \/>\n1 heaped Tbsp lemon zest, finely chopped<br \/>\n1 heaped Tbsp fresh garlic, finely chopped<br \/>\n1 tsp sea salt<br \/>\n1\/4 tsp Herbamare<br \/>\n1\/2 tsp Xanthan gum<\/p>\n<p>1. Combine all ingredients (except Xanthan Gum) and blend thoroughly.<br \/>\n2. Slowly add xanthan gum and continue to blend until mixture thickens.<br \/>\n3. Full flavour will develop after 6 to 8 hours.<\/p>\n<p><strong><span style=\"color: #ff00ff;\">GUEST RECIPES<\/span><\/strong> : from Debra<\/p>\n<p><span style=\"color: #ff0000;\"><strong>RICOTTA PIKELETS<\/strong><\/span><\/p>\n<p>2 eggs<br \/>\n4 tablespoons sugar<br \/>\n2 cups SR Flour<br \/>\n1 &amp; \u00bd cups milk<br \/>\n\u00bd teaspoon Bicarb Soda<br \/>\n250g TVWFC Ricotta<\/p>\n<p>Beat egg &amp; sugar. Add flour alternately with the milk in which the Bicarb Soda has been dissolved. Beat the ricotta into mix and leave for 30 mins. Gently fry in a slightly buttered pan, in small batches.<\/p>\n<p>Top with Tweed Valley Whey Farmhouse Bondon (Cream Cheese) and honey.\u00a0\u00a0 YUM!<\/p>\n<p><strong><span style=\"color: #ff0000;\"><br \/>\nZUCCHINI &amp; HALOUMI FRITTERS WITH YOGHURT SAUCE<\/span><\/strong><\/p>\n<p>500g grated Zucchini (about 4 large ones)<br \/>\n\u00bd teaspoon ground Sea salt<br \/>\n1 onion, finely chopped<br \/>\n125g TVWFC\u00a0 Haloumi, grated<br \/>\n1 cup roughly chopped baby spinach<br \/>\n2 eggs. beaten<br \/>\n60g (1\/4 cup) plain flour<br \/>\n\u00bd cup olive oil or Rice Bran Oil for frying<\/p>\n<p>Put the grated zucchini in a colander, sprinkle with ground<br \/>\nsea salt, toss lightly and set aside for 30 minutes. Squeeze out the excess liquid<br \/>\nfrom the zucchini and pat dry with paper towels.<\/p>\n<p>Put the zucchini, finely chopped onion, grated Haloumi, baby<br \/>\nspinach &amp; beaten eggs in a bowl and stir until combined. Stir in the flour<br \/>\nand add pepper if desired.<\/p>\n<p>Heat the oil in a non stick fry pan until hot and drop batter<br \/>\ninto fry pan flattening gently with the back of the spatula. Cook until well<br \/>\nbrowned on both sides.
